THESE ADDITIVES KEEP YOUR MEAT SAFE DURING THE LONG SMOKING PROCESS AND BEYOND

sodium nitriate

Before modern refrigeration, our ancestors used curing salts to preserve meat.  This additive preserves meat during its long smoke and leaves a few days later as it is transformed into lactic acid.  It prevents foodborne illness and ensures your product is wholesome and safe.

lactic acid starter culture

Fermenting sausage is a process that is THOUSANDS of years old.  These cultures work with salts, sugars, and sodium nitrite to naturally preserve meat during smoking and beyond.  You will notice an OLD-WORLD Tang and a much-improved Texture in these products.

 Collagen casings are made of beef products and used on any encased sausage except Summer Sausage.  These casings are completely edible.  

fiberous summer sausage casings

We use One or Two & one-half-pound Fiberous Summer Sausage Casings.  These casings must be removed before consuming the product.
